Sweet Potato Pie Yogurt Bowl

Guys, guess what?!  We’ve just about made it through another week!

Sweet Potato Pie Yogurt Bowl

Today is the 3rd morning in a row I’ve had this dessert.

Err… I mean… yogurt bowl.

Honestly, it really does taste like dessert.  I actually forgot I was eating something healthy!

Sweet potatoes mixed with creamy yogurt to give it that rich dessert consistency.  Plus warm cinnamon and vanilla flavors to really enhance that home-baked feeling.

Sweet Potato Pie Yogurt Bowl

Sweet Potato Pie Yogurt Bowl

Serves 2

Ingredients:

1 large roasted sweet potato (or microwaved)

1 individual container plain Greek yogurt (about 3/4-1 cup)

1 scoop vanilla protein powder (I used Sunwarrior brand)

1/3 cup unsweetened vanilla almond milk (or regular milk)

1/2 tsp ground cinnamon

Pecans or other toppings

Directions:

1.  In a large bowl, mash sweet potato.

2.  Add remaining ingredients.

3.  Stir until well combined.

Step 3

4.  Divide into two bowls and top with pecans and/or any other desired toppings.

*You could probably also substitute a container of vanilla yogurt for the plain but then I would omit the vanilla protein powder and decrease the almond milk.

The very first time I made this on Wednesday, I didn’t have any pecans so I topped with Bourbon Pecan Peanut Butter.  Divine!  And so many options!

    This looks seriously awesome! What a fun and new way to eat sweet potatoes for breakfast. I am convinced that they belong in every meal…AND as snacks! 😉
