Gosh, I know everyone is saying it but what is up with this rain the past two weeks? How can there possibly be anything left up there? Our flight was delayed all morning so we didn’t get out until late afternoon yesterday. Such a bummer! Our trip is already short and it left us barely any time to get our wedding business done.
But let’s look on the bright side… we are finally in Florida and it’s 80 degrees! For now, I’ll leave you with a little recipe to jumpstart your morning!
Ultimate Toasted Trail Mix
3 cups mixed nuts and/or seeds (I used 1/3 cup each pistachios, walnuts, almonds, pecans, peanuts, macadamia nuts, cashews, pumpkin seeds, sunflower seeds)
1 cup dried fruit or other mix-ins (I used 1/2 cup each dried cranberries and mini chocolate chips)
1. Preheat oven to 425. Spread nuts and seeds on a baking sheet and toast for about 15-20 minutes, carefully monitoring so they do not burn. (I moved them around every couple minutes until toasted.)
2. After the nuts and seeds cool completely, pour into a large bowl.
3. Add dried fruit and any other mix-ins. Sprinkle a little salt and cinnamon over the top and mix well.
4. Give a few taste tests to make sure the seasonings are right. Then store in an airtight container.
