Chicken and Veggie Kebabs

Happy Friday!

Several great things about today:

  1. Obviously, it’s Friday which means the weekend is here!
  2. Today is the official first day of summer.
  3. According to one source, the sun will be out for 15 hours and 6 minutes marking the longest day of the year… over 6 hours longer than it is December 21st.
  4. And finally, in at number 4…

The cutest face in the world! ūüôā ¬†As I was getting ready for work this morning, I passed by my sleeping boys and these eyes were poking out of the covers. ¬†I just couldn’t resist giving Mac some puppy cuddles before heading out for the day!

Chicken and Veggie Kebabs

Last night’s dinner was DELISH!

Chicken and veggie kebabs and corn-on-the-cob all cooked on the grill.

While I was waiting for Dave to get back from golf, I whipped up a quick marinade for the chicken which consisted of:

  • Juice of one large lemon
  • 5 garlic cloves, minced
  • Approximately 4-5 tbsp olive oil
  • 2 tsp fresh oregano, chopped
  • 2 tsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper

Side note:  I found these smaller containers of fresh herbs at Jewel yesterday.  I hate spending $4 on fresh herbs only to use for one recipe so I was soo excited to find these little packages.  PLUS, they were only $1 a piece!

I chopped the chicken into large chunks (about 1″ cubes) and coated with the marinade in a large ziploc bag.

While the chicken was doing its thing, I gathered all the veggies together.  Green peppers, zucchini, mushrooms, red onion, and very mini potatoes.

Dave arrived home in perfect timing to help create the kebabs!

Meanwhile, I soaked the corn in the husks in some water before we cooked them on the grill. ¬†We’ve found that getting some moisture inside the husks helps steam and cook the corn faster.

The corn took a bit longer but the kebabs were done in a matter of about 5 minutes.

We both agreed this will go on our favorite dinner list… a perfect summer meal! ūüôā

WIAW #19: Addicted

Halfway through the week!

I’m definitely looking forward to going home tonight. ¬†The forecast seems promising so far in both Louisville and Chicago. ¬†I’ve had between 2-5 hour delays in my last 4 audits sooo I’m really hoping things stay on schedule!

What I Ate Wednesday

Since it’s Wednesday, it’s time for another WIAW post. ¬†If you’re not familiar, you can read about it here.

Breakfast

After a nice and sweaty Crossfit session, I grabbed something to eat from the little coffee shop at the hotel while I got ready for the day.

Iced latte and a banana, plus a packet of Barney Butter almond butter I brought along in my suitcase. ¬†I normally drink my coffee sans cream or sugar so the latte was a nice change! ¬†Creamy and delicious ūüôā

Once I was showered and ready, I headed down to the hotel restaurant for a real breakfast.  Omelet with mushrooms, green peppers, and onions, homestyle potatoes, and biscuits.

Lunch

After working for a few hours, my coworkers and I broke for lunch.

And I was happy the group decided on my favorite, Panera!  Same as usual Рthai chopped chicken salad and whole wheat baguette on the side.  Plus that delicious new Hibuscus iced tea I had last time on my audit.

Afternoon Snack

By the time we got back to the hotel, each of us went back to our rooms to regroup for about an hour or so before meeting back up for dinner.

Butter toffee peanuts, yogurt raisins, honey roast sesame sticks, honey peanuts, almonds, and dried apples.

Sooo lets get back to the games I was playing on my iPad… my friends, Darcy and Lauren, recommended this game, Fairway Solitaire. ¬†They warned me it was addicting and were they ever serious!? ¬†I’ve been playing it every spare minute on this trip!

It’s also maddening! ¬†This little gopher laughs at you when you play poorly! But I still can’t stop!

Dinner

Finally, I took a break and met up with the other two for dinner.  We headed to the Fourth Street area of downtown Louisville and settled on another brewery called Gordon Biersch.

I ordered the Mediterranean Chicken entree, consisting of grilled chicken breast with a bruschetta topping, a side of sauteed veggies and jasmine rice.  It was quite tasty!

Back at the hotel, I continued playing Fairway Solitare and sometime¬†in the midst of my games, I was hungry again so I snacked on some mixed nuts. ¬†I played this maddening game¬†until I physically couldn’t keep my eyes open and called it a night! ¬†Can we say addicted??

Crossfit Louisville East

Hello from Kentucky!

Two of my coworkers and I are currently out of town for an audit in Louisville.  We flew in yesterday afternoon and had a few hours to relax before heading to dinner.

Anyways, we stumbled on this brewery and smokehouse, Against the Grain, which is located in a section of an old, renovated train station.

I ordered the pulled pork sandwich which also came with coleslaw and their house barbeque sauce (left).  They also offered several other kinds of sauces so I chose a vinegar-based sauce called Carolina (right) for some variety.  Everything was delicious!

Crossfit Louisville East

Since I don’t have to be at work until 9:30 am this morning, I decided to drop in a local Crossfit box to get a workout in.

Generally, Crossfit gyms allow people to visit while out of town without being a member.  I had the choice to pay a small fee or buy a shirt and workout for free.

WOD

Today was their “rest day” which I later found out was anything but! ¬†I now realize the coach meant no heavy lifting. ¬†We started off with a warm-up of jogging and sprints. ¬†Although my foot is still a bit sore from the half marathon a few weeks ago, I decided to try running a bit and good news, no pain! ¬†ūüôā

Then came “Annie” consisting of double unders and ab-mat situps. ¬†The exercises are split up into 5 sets of 50-40-30-20-10 reps each. ¬†(i.e. 50 DUs, 50 sit-ups, 40 DUs, 40 sit-ups, etc.)

AND THEN came the actual WOD:

  • 10 wall balls
  • 5 burpees
  • 10 kettle bell swings

10 rounds each

I was a sweaty mess at the end but as always, I felt amazing!!  Now time to get ready for work.  Have a fantastic day!

Madhouse on Madison

Dave and I had a little Sunday Funday yesterday!  We began our morning with some engagement pictures, courtesy of my dad and his lovely assistant (my mom), and then headed downtown Chicago.

Our first stop was Roots, one of our very favorite restaurants down the street from where we used to live. ¬†We usually would have dinner¬†at least one night a week there, so we’ve been missing it like crazy since we moved!

I, of course, ordered my usual creation from the “Build A Salad” menu.

Baby mixed greens, roasted red peppers, red onions, tomatoes, pistachios, goat cheese, grilled chicken and cilantro vinaigrette. ¬†Oh, how I’ve missed this salad! ūüėČ

After hanging out at Roots for a couple hours, we headed over to the “madhouse” (aka United Center).

We met up with our friends, Will and Julie, and Julie’s sister and mom, and also ran into several other familiar faces.

The Hawks played great!  Upon arriving at the stadium, everyone was handed red Stanley Cup Playoff towels and every time the Hawks scored, the crowd went wild!

Cooking Scrapbook – Mexican Flank Steak

Can you believe today is the last day of May?  This year is flying by!

I don’t know if its the crummy weather this week or what but I have been feeling really tired lately. ¬†So tired, in fact, that I was too lazy for anything other than cereal last night for dinner and I fell asleep on the couch at 8:30. ¬†Yep, I’m a party animal.

Side note Рhave you tried this new cereal, Honey Nut Cheerios Medley Crunch?  It tastes like a combination of Honey Bunches of Oats and obviously Honey Nut Cheerios.  Very good!

Cooking Scrapbook Recipe

Last weekend, Dave and I grilled flank steak on the grill using a favorite family recipe for the marinade, which I included in my mom’s¬†cooking scrapbook.

I’m sure this marinade would work well on just about any cut of steak or perhaps another type of meat, but I just love the way this tastes using the flank steak.

Mexican Flank Steak

Ingredients:

2 lb flank steak

1/2 cup olive oil

2 tbls vinegar

1 1/2 tsp salt

1/8 tsp Tabasco sauce (or more to taste)

1 tsp oregano

1 tsp chili powder

1 garlic clove, minced

Directions:

1.  Combine all ingredients (except steak) into a ziplog bag.  (I used a bowl to help keep the bag open.)

2.  Add flank steak and make sure the marinade gets evenly distributed over the entire steak.  Let marinade for about 2 hours on the counter to bring the meat to room temperature.

3. ¬†Cook on the grill until meat is at desired ‘doneness’. ¬†Let steak rest for about 10-15 minutes before slicing on a diagonal.

  • I recommend the steak to be cut at a sharper angle than what the above picture shows. This was my first time slicing it since my dad wasn’t here to do it for me. ūüėČ
  • After only 2 hours of marinating, the steak is chocked full of flavor. ¬†According to my mom, I would highly suggest not letting it marinade overnight as the flavor ends up almost too powerful.

Grocery Shopping When Hungry

Hope you’re staying dry this week (depending on where you live). ¬†The storms just won’t give up the past few days around here. ¬†Looking on the bright side, I’m thankful for the warmer weather at least.

Normally I would present the usual WIAW (What I Ate Wednesday) post today, but a) I failed at photographing all my meals and snacks yesterday and b) my food wasn’t all that exciting for the most part…

I got out of work a little early yesterday afternoon and swung by good old Trader Joe’s real quick before I had to pick up Mac. ¬†I confess the primary reason was to purchase more Espresso Pillows because I’m addicted, but of course, I found my slightly-hungry self wandering through the aisles. ¬†Before I knew it, I had both arms full.

DSC_1624I initially passed up the pretzel buns but after I walked by the turkey and cheese, I started dreaming of a sandwich I had from Birchwood Kitchen with Lauren and Cassie a couple weekends ago before the half marathon.

It looked (and tasted) an awful lot like this guy. ¬†I’m not sure where or when I became obsessed with pretzel buns but they make me happy. ¬†Plain and simple.

Pretzel bun, roasted turkey breast, extra sharp white cheddar, and spicy mustard.

Besides the pretzel bun, of course, the extra sharp white cheddar cheese absolutely makes the sandwich, in my opinion.

They Grow Like Weeds

What a great weekend! ¬†Full of friends, family, food, relaxing…. and weeding!

Admittedly, this overgrowth of weeds is a little embarrassing.  There were some spots where the weeds climbed about 3 feet high!

AND to make matters worse, they were the prickly kind! ¬†But in our defense, the majority of these things popped up in a matter of about 2 weeks and we finally took care of them so I’m not feeling too bad anymore. ¬†ūüėČ

Crazy, right? ¬†I now have a full appreciation for the expression, “Kids grow like weeds!” ¬†I mean, one second they’re tiny (or non-existent)¬†and then before you know it, they’re 3 feet tall!

Mac kept himself occupied with his kong for part of the afternoon.

Unfortunately, he had to stay on a leash so we didn’t have another MIA episode like last time. ¬†But hopefully very soon, we’ll have a brand new fence put up so he can roam free in the backyard!

Despite many hours of back-aching work, we still need to get our hands on the weeds on the side of our house.  Dave and I were both really sore, so we finally called it a day once the main back patio area was finished.

Once the weeds are good as gone, project #2: mulch! ¬†Exciting stuff, I know. ¬†The perks (?) of owning a home…

In other news, Dave and I grilled an amazing dinner this weekend.

Zucchini, sweet & regular potatoes, and Mexican Flank Steak. ¬†This meal was absolutely delicious and the marinade for the flank steak is TO DIE FOR. ¬†(Recipe coming soon! ūüôā )

I also baked a rather large batch of cookies, which lasted all of about 24 hours or less.  I mean, they were just THAT good and no one could stop eating them until they were completely gone.  (Yet another recipe coming your way!)
