The Internship

Heyyy there!  Hope everyone’s week is moving along smoothly.

I’ve been taking advantage of the seasonal fruits lately – mostly berries and nectarines – so breakfast has been looking a lot like this the past few mornings.

I’ve especially been loving the nectarines.  So juicy and sweet and a perfect topping for cold yogurt on a hot, muggy day!  Yummy!

The Internship

Dave and I recently figured out the last time we’ve both been to the movies was since before we got Mac!  That’s over a year ago!

So when Dave text me yesterday afternoon to suggest a movie, I was totally in!

Neither one of us had any particular movie in mind, so we just looked at the nearby theaters and chose one that fit best with our schedule.  We both generally tend towards comedies so The Internship seemed to fit the bill.

The movie was about two men who lost their jobs and somehow managed to land internship jobs at Google.  All the interns had to form teams to compete against one another in order to be hired on full-time after the summer was over.

Owen Wilson and Vince Vaughn always make a good combination.  Although I wouldn’t say it was quite up to par with Wedding Crashers, it was still pretty funny and entertaining.  Plus, it was nice to finally get back in the theater for a change of pace!

Summer Firsts

This weekend officially marked the beginning of summer… for me at least!  Among many things that reminded me of summer, I finally feel like the temperatures were consistently in the 70s and 80s.

First Ice Cream Run

Dave and I hit up a new yogurt spot a few minutes from our house called Yumz.  It’s one of those self-serve shops with tons of flavors and toppings to create your own dessert.  I’m telling you, that was a dangerous move.  I mean, very dangerous.  I have a feeling we’ll be back all too quickly! 😉

Lots of them!  I topped yogurt with blueberries, threw them in cereal, and ate them straight out of the container.  All weekend long.  Sooo good!

Okay so I know flowers are technically a sign of spring, but our back patio is beaming with colors from all sorts of flowers.

They are sooo beautiful, I couldn’t stop staring at them all weekend… from the back patio window… while I was slaving away doing schoolwork.  😦

Cooking Scrapbook – Curried Chicken Salad

TGIF!  Hope everyone’s week went by smoothly and quickly.  I’m definitely ready for a 3 day weekend!

I planned on posting yesterday while I was in St. Louis for an audit but technology wouldn’t allow it.  We are in transition at work for new laptops and I was selected to test out one of the new models to ensure there aren’t any problems.  I brought it with me and sure enough, major glitch #1: neither the wireless network on the laptop, nor my AT&T wireless card gave me internet access.

But I’m back in town and all good in the (internet) hood!

Cooking Scrapbook

Just a little reminder, a few years ago I put together a cooking scrapbook for my mom.  It includes various recipes from my childhood through current (or since I moved out a couple years ago).  I thought it would be a neat idea to cook my way through those recipes and remember all the memorable times I spent growing up and being in the kitchen with my mom.

Here’s a little recap of ones I’ve done so far:

Curried Chicken Salad

Since I thought summer was finally here last week, I was in the mood for a crisp, refreshing, light salad so I dusted off the old scrapbook and decided to make this chicken salad.

I even enjoyed a big bowl of it outside… when it was still nice out!

Note the sarcasm?  I’m a little bitter than I had to dig out a coat this morning since it’s in the 40s around here.  Ridiculous!

Anyways, this salad is light and refreshing. It would be perfect for a summer picnic!

It does contain curry (which can be strong in some dishes) but the flavor here is subtle and gives it a nice touch.

Curried Chicken Salad

Ingredients:

3/4 cup plain 2% Greek yogurt

3/4 tsp curry powder

1/4 tsp salt

3 cups diced cooked chicken

1 1/2 cups red seedless grapes, halved

3/4 cup celery, sliced

1/3 cup green onions with tops, thinly sliced

2 Granny Smith apples, diced

1/3 cup pecans, chopped (I ended up using half pecans, half walnuts since I ran out)

Butter lettuce leaves, optional

Directions:

1.  Mix together yogurt, curry, and salt in a small bowl and set aside.

2.  Combine all chopped ingredients in a large bowl (chicken through pecans).

3.  Add yogurt mixture to large bowl and stir until evenly coated.

4.  Serve over large butter leaves, if desired.

WIAW #18: Bowls of Goodness

Gooood morning!  Hope you’re having a fantastic week so far!  Only a couple more days before the long Memorial Day weekend. 🙂

Before I head off to St Louis for an audit this week, here is another What I Ate Wednesday post.

Breakfast

I’m pretty much obsessed with this scrambled egg combination and I’ve been eating it up like crazy lately.  Since I’m taking a few days off to recover, I have extra time in the morning to prepare a hot bowl of eggs.

Three eggs scrambled with a splash of milk and dash of salt and pepper, topped with half a diced avocado, lots of crumbled feta cheese, and few shakes of Cholula hot sauce.

When I arrived up at my desk, I had a piping hot cup of coffee from Mickey D’s waiting for me, courtesy of one of my coworkers. 🙂

Mid Morning Snack

I dove straight into work and was able to accomplish a lot without checking the clock every 20 minutes which definitely made the first half of the day go by in a flash!  Love days like those.

My bowl of eggs fueled me nicely throughout the morning and my only indication that it was past 10 am were the growls escaping my stomach.  I munched on baby carrots and snap peas dipped in roasted red pepper hummus while I continued working away at my desk.

Lunch

I finally broke for lunch and went downstairs to eat with a few coworkers.

Spring mix, cucumbers, tomatoes, green onions, craisins, macadamia nuts, goat cheese, and blackened chicken (leftovers from Monday night’s dinner).

I poured this Lite Sun Dried Tomato dressing into the bottom of the container along with the cucumbers so the rest of the salad remained fresh.  When I was ready to eat, I shook everything up so the dressing could evenly distribute.  Very tasty!

Afternoon Snack

The other day Jewel was offering two 1 lb containers of strawberries for $4.  Although I intended on purchasing blackberries instead, the decision was a no-brainer – a tiny clamshell of blackberries for $3.98 vs 2 lbs of strawberries for basically the same price.

And now I’m stuck eating 2 lbs of strawberries! 😉

A perfect afternoon pick-me-up!

Dinner

The positive side to skipping a morning workout is getting out of work a bit earlier.  I spent the rest of the afternoon and evening relaxing and enjoying some leisurely cooking in my kitchen.

I snacked on a few Italian Bistro Pretzels from my Nature Box this month and pepperjack cheese slices while I worked in the kitchen.

I finally sat down to a big bowl of pasta.  I layered baby spinach on the bottom, which wilted down nicely from the hot fettuccine, along with steamed broccoli and cauliflower, roasted garlic dressing, red pepper flakes, and parmesan cheese.

I had a real craving for marinara sauce which is what inspired me to cook up the pasta, but I failed to realize that I had no sauce in the pantry until the very last second.  Instead, I tossed the pasta lightly in roasted garlic dressing and it tasted great!

I cuddled up with blankets and my furry friend to watch TV and munch on a few dark chocolate almonds.

WIAW #15: Full to the Max

Ahh well, ya know what ‘they’ say…. April showers bring May flowers.  And I think we’re all ready for flowers and warm weather.  At least I am!

What I Ate Wednesday

Not only is today the first day of May, but it’s also Wednesday so I guess another WIAW post is in order.  Click on this to see what it’s all about!

 

I skipped last week because a) I was too excited to share our update on the wedding plans, b) our fridge was nearly bare from being out of town (it took me a full week to finally go grocery shopping), and c) I was too darn lazy to photograph a single piece of food.  So there.

But WIAW is back today, let’s have a look.

Breakfast

I created an egg wrap to go for my car ride in to work.

I used to make these ALLLLL the time and then, I don’t know what happened?!  I just stopped all of a sudden – I tend to get stuck in breakfast ruts making the same thing over an over (aka yogurt bowls… don’t worry, still love ’em) but I figured it’s time to get a little crazy and ya know, mix things up a bit. 😉

And now that these bad boys have been reintroduced, they will definitely be back in the breakfast rotation!

Warm whole wheat tortilla with a Laughing Cow Cheese Wedge spread in the middle (I used French Onion this time) with 3 scrambled eggs in the middle and of course, lathered with Cholula sauce!  So. So. Good.

Mid Morning Snack

My wrap was quite filling so I wasn’t too hungry in between breakfast and lunch, but I packed a light snack and ate it about an hour before lunch.

Baby carrots (which were super fat and not so ‘baby’-ish), plus sugar snap peas.  By the way, snap peas = amazing!  So crispy and crunchy 🙂

Lunch

Monday night, at Dave’s request, I threw 2 lbs of chicken breasts into the crock pot to make a big ol batch of shredded buffalo chicken.  So of course, it made an appearance in my lunch the next day.

Baby romaine salad, topped with a mix of roasted zucchini, summer squash and red onion, plus grape tomatoes, shredded buffalo chicken, lots of creamy goat cheese, and balsamic dressing.  Oh my goodness, this was soooo tasty!

Afternoon Snack

Per the usual, I needed something more to eat a few hours later.

Greek yogurt with canned pumpkin loosely stirred in and a sprinkle of cinnamon and nutmeg.

Dinner

I took advantage of the B-E-A-UTIFUL weather and ate dinner outside as the sun went down.  Ohhh and it made me crave summer that much more.  I think (I HOPE!) it’s finally here… 😉

Underneath everything is roasted spaghetti squash and the remaining leftover roasted zucchini, summer squash and red onions, all topped with a generous serving of spicy marinara sauce.

George grilled up a turkey breast and I then layered some marinara, mozzarella and fresh parmesan cheese on top and stuck under the broiler for a few minutes to melt.  I guess it was a spin off chicken parmesan… except with a turkey burger.  Oh yeah, and no breading.

This meal came together surprisingly well for being as hungry as I was!  I often envision a wonderfully put-together meal on my way home from work and then somewhere along the way, my hunger gets the best of me and kills the execution.  This was not the case.

The only issue with this meal is it left me uncomfortably full…

…ummm that is, until I heard my name being called from the freezer, so I enjoyed a banana bite to round out the meal.

I mean, after all I still had room in my dessert stomach for a little sweetness! 😉

WIAW #13: Tap House Grill

Halfway through the week already!  The last two days have flown by (as much as they can for a work day) because I’ve had a lot on my plate with work and have been super productive.  Always a good feeling!

Speaking of plates, I’m up to bat for another What I Ate Wednesday post! 😉

Breakfast

I fit in my longest half marathon training run to date of 9 miles early yesterday morning.  I was impressed how great I felt during those last couple miles!

Immediately following my run, I downed a chocolate protein shake to replenish my energy.  I love the convenience factor of the individual cartons, no shaking or mixing powder required!

About an hour later, I ate my usual greek yogurt bowl – bananas on the bottom, greek yogurt layer, topped with blackberries and drippy cinnamon vanilla almond butter.

Mid Morning Snack

PR Bar and Peach Pear La CroixI worked away for a few hours before my appetite forced me to pull out a snack.  I had a Chocolate Peanut PR Bar and a La Croix, Peach-Pear flavor!

Lunch

For lunch, I prepared a wrap and a chopped veggie salad.

I spread a Laughing Cow Swiss Cheese wedge over a whole wheat tortilla and wrapped up baby mix green lettuce, leftover ham from Easter, and a squirt of Dijon mustard.

I needed to use up some veggies in the fridge before they went bad so I finely chopped up red bell pepper, green bell pepper, English cucumber, green onions, and grape tomatoes.  I tossed it all in a balsamic vinaigrette and sprinkled feta cheese over the top.  This turned out delicious and soo fresh-tasting!

Afternoon Snack

Like clockwork, I started to get hungry again late afternoon.

Cottage Cheese Bananas Sunflower Butter

Look familiar?  Very similar to breakfast, I sliced up banana and layered on the bottom with cottage cheese on top and a glob of sunflower butter.

Peach Pear La Croix

Because I’m quite addicted to La Croix, I drank another peach-pear to wash it down.

Roasted Kettle Kernels Handful

I worked a bit later yesterday so I was already hungry again on my way home.  I snacked on a few handfuls of these roasted kettle kernels.

They taste like a cross between those half-popped popcorn kernels at the bottom of the bowl and corn puff cereal.  Soooo good!

Dinner

I easily could’ve eaten that entire bag of kernels but refrained since Dave and I met his parents for a bite to eat.  At my friend Darcy’s recommendation, we tried out the Tap House Grill in St. Charles.

I ordered the “Tap House Chop Chop” salad and added rotisserie chicken.  Romaine lettuce, celery, tomatoes, garbanzo beans, pepperoncinis, bacon, bleu and parmesan cheese, cucumbers and onions with a herb-balsamic vinaigrette.

Amazing, I tell ya!  They chopped up all the ingredients super finely so I got an equal tasting of everything in each bite.  Loved it!

Everyone else loved their food as well!  Dave and I have been searching for a go-to dinner spot and on our way home last night, we both agreed this might be our new favorite!  Thanks Darcy!

WIAW #9: Snow Day

You’ve probably already guessed it by now but yesterday I took my own personal snow day!

And honestly, I couldn’t be happier with my choice.  I woke up at my normal time, headed downstairs, and looked out the window.  While there was only a light dusting so far, I checked the weather and the forecast still called for about 10 inches and 90-100% chance of snow every hour for the remainder of the day… no thanks!

What I Ate Wednesday

Yesterday was a bit “snackier” than most WIAW posts, probably because I saved the lunch I had packed the night before for today and had nothing planned for the day.

I enjoyed a couple cups of coffee and relaxed for about an hour before heading to the gym.

On my way out the door, I grabbed a snowball energy bite to get something in my stomach pre-workout.  (Recipe coming your way soon!)

Mac Peanut Butter

As I pulled into the garage, Mac was finishing off the last of his peanut butter jar.  We normally put a tiny bit of peanut butter inside his red Kong toy to keep him busy but only a little peanut butter remained in the crevices so he earned the entire jar today and licked it clean!  Takes after his mom! 😉

I was starving when I got home but Mac begged for a walk so I quickly scarfed down an apple with a yogurt-peanut butter dip, bundled up, and headed out into the blizzard.

I wasn’t all that hungry after our walk (probably because I used whole milk yogurt for that dip and ate twice as much as in the picture) but wanted a little something more so I nibbled on a couple small handfuls of Vanilla Roast Almonds.

As lunchtime rolled around, my appetite was back in full swing.

Afternoon Snack(s)

I worked a little from home after lunch and then cuddled on the couch with Mac to read a book.

snack1A few hours later while I was reading, I was craving something sweet so I had a small bowl of Greek yogurt with banana bread granola and a drizzle of peanut butter to satisfy my sweet tooth.

Not surprisingly, I fell asleep while reading but woke up around 4 pm feeling refreshed and once again a little hungry.  To tide me over til dinner, I wrapped a slice of herb roasted turkey in a couple butter lettuce leaves with dijon mustard and a sprinkle of mozzarella cheese.

Dinner was EXCELLENT!  It’s been a very long time since I’ve cooked tilapia OR brussel sprouts for that matter and were very tasty!
